I will post the cheesecake later, just wanna know what is your new or fave dinner dish right now? I cooked friday. and will post as well. some of my friends as well as family members keeps insisting I should have a small business in cookery. I put it off for years, and am reconsidering, just I need to just take a chance and go for it. just give a try, this is cooking at my home, my brother did offer to help me open a small business, but I backed out. I will try at home 1st, then maybe move on if all goes well.

It does my heart good when i see 3:40 AM posts by ya. You are like an after 12 DJ accross the Texas plains. Good, somehow comforting to know you are out there. I will be getting some onion and garlic from the store. Just add one or the other or both integrated into what ya have that is complimentary. that's all i got on the food scene Budie. Enjoy.

Thank you oldraymond, and yes I can be a night owl here, as for cookery, I hear it can be a struggle with uncle sam, have to go through with a license and taxes and health boards, I know I can go through that. but what is it worth? would it mean paying more? that's exactly what I am wondering. gotta do a bit of math work if I decide to go for it.

Why not check out SuzeOrman .com and look for start up business---or business start up subject for a guide. I watch her on tv and while her personality could be better she knows her shit. 

You got Supply and Demand considerations for "NightOwl Pies". write a mission statement for starters. One sentence maybe up to three should do it. Your web experience could be great, but i hear food prices and gas are up and the economy is tough. To balance that cruel reality a shitload of great lil companies grow as green sprouts in such times. Texas , I suspect is more favorable and doing better in general than let's say California. New York was beautiful and easy in 1996-i incorporated first thing - it was called a sub S corp. Anyway ...  

You have locals, friends and family, internet folks for "feed"back. Hey we all gotta eat !!

Vintage Frito Chili  Pie Casserole

2 cups lightly crushed frito corn chips

1 (19 ounce) can chili (without beans)

1 large onion chopped

 1 cup grated American cheese, I go for long horn cheddar  cheese!

1. reserve some corn chips for topping.

2.place half of the rest corn chips (fritos) in bottom of casserole dish.

3. pour half of the chili over corn fritos.

4.top with half onion.

5.top with cheese. and repeat. and top with reserve fritos corn chips.

Bake Uncovered at 350 for mmmmmmmm about 20 - minutes or so,

Taste! ENJOY!!!!

a couple more to fix this fave dish just warm up chili, add shredded chese onions to that frito bag. or pour fritos in bowl add the warm chili and top with shredded cheese and onions

Just wondering what's with it between Anthony Bourdain and that Paula deen? heh! looks like a put down on one another, I love anthony, so I will take his side, he can be an ahole but I Love His shows!!!! as for paula well, ya can hunt up any recipes, I heard she's not a great cook, oh lemme add Martha Stewart as well, she's crooked. creative in some ways but, look I think she got away with it. she still has her career.

My fave is anthony at least he's truthful, like seeing his shows.

Ranchman's Ponder Steakhouse In Ponder Texas, Bonnie and Clyde movie was filmed there, a bit when Clyde tried to rob the Bank there(Warren Beatty) best hamburger place I.M.O. where is Anthony Bourdain???

and forget that chesse cake was not that great!!!

what is your favorite Ice Cream? Mine is Braums Chocolate Almond MMMMMMMMMMMM!!! but I bought some Blue Bell On A Stick- Butter Crunch Bars  Oh YES!!!! Also My FAVE from Blue Bell,  Mint Chocolate Chip Bars MMMMMMMMMMMMMMM!!!!!!  Devilish  Delight For A Taste for a sweet tooth!!!! goes Excellent with COFFEE as well!!! once in the mornin my fave combo thar!!!!

I ain't no cook but this I can do!   Pralines and Cream, Vanilla and Orange Sherdet, Chocolate Chip,  Coconut denched in pineapple topping, Warm Chocolate cake no icing and Vanilla ice cream melting all over it. Frozen Bon Bons! the list is endless!
